S5E28 – The Truth About Nutrition
Chip Paul:
Hello, everyone, and welcome to another exciting episode of Chip Talks Health. Today, we’re going to talk about nutrition — and give you some truth that you’ve likely never heard before, at least not in this way or at this depth.
If you’re eating like most people, you’re malnourished. You’re likely not getting enough Omega-3 fat, not getting enough protein, and not getting enough B vitamins. We’re going to walk through these issues, dispel some mistruths, and share the truths about nutrition that can change your health.
Most disease really comes down to two categories: infection and nutrition . And guess what? If you have poor nutrition, you’re easier to infect. Your immune system is weaker and less robust. Poor nutrition → weak immunity → higher infection risk → even worse nutrition → a vicious cycle.
So today, we’ll break down nutrition into three categories, in order of importance:
Dietary fats
Proteins and amino acids
Vitamins
We’ll also look at how balancing these three reduces risk and strengthens immunity.
Fats are by far the most important food we eat daily. Every cell wall and membrane in your body is made from fat. Fats also store energy — in fact, more than twice as much as carbohydrates.
There are four main types of fats:
Saturated fat
Monounsaturated fat (oleic acid, found in olive oil, nuts)
Polyunsaturated fats (Omega-3 and Omega-6)
Saturated fats are mostly neutral, monounsaturated fats are anti-inflammatory, and Omega-3/Omega-6 must be in balance for your immune system to work properly.
Right now, our food supply is dangerously skewed. Instead of a healthy ratio of ~1:1 or 1:4, Americans consume closer to 1 Omega-3 for every 40 Omega-6s . This imbalance overstimulates inflammation, increases allergic reactions, and makes us “hyper-reactive.”
I recently co-authored a white paper on this crisis with Dr. Artemis Simopoulos , the world expert on dietary fats. This issue is not well understood but it is profoundly harming our health.
Key point: Everyone needs to supplement Omega-3 to begin correcting this imbalance.
Protein isn’t about “protein” itself — it’s about amino acids . When you eat protein (meat, collagen, whey), your body breaks it down into individual amino acids.
There are:
9 essential amino acids (must come from diet)
5 conditional amino acids (glutamine, arginine, proline, cysteine, tyrosine) — your body makes them unless you’re infected, inflamed, or injured.
Most people are deficient not only in essential amino acids but also conditionals. That’s why collagen can help — it contains both essentials and some of these critical conditionals that support skin, hair, teeth, and tissue repair.
TrueMedX solutions:
Essentials Protein Powder – nine essential + conditional amino acids plus vitamin C for collagen support.
Recover Powder – a post-workout blend of conditional aminos, engineered to not break a fast.
Vitamins fall into two groups:
Fat-soluble (A, D, E, K): stored in fat, less urgent daily.
Water-soluble (B and C): no storage, must be consumed daily.
B vitamins are critical for mitochondrial energy production, DNA repair, and neurotransmitter synthesis. Without enough B vitamins, you get fatigue, brain fog, poor detox, and weaker immunity.
Vitamin C is an antioxidant, helps with collagen synthesis, reduces oxidative stress, and supports immune balance.
TrueMedX solutions:
TrueMedX Multivitamin – includes A, B, C, D, E, K plus trace minerals like zinc, iron, selenium, copper, and chromium for complete coverage.
Here’s what happens if we optimize fats, proteins, and vitamins:
Balancing Omega-3/6 lowers all-cause mortality by ~30%.
Adequate amino acids lower risk another 20–30%.
Correcting vitamin deficiency reduces risk another 20–40%.
Combined, that’s up to 60% lifetime disease risk reduction compared to a standard Western diet.
This is simple enough to teach to kids. Yet it’s not in our schools or medical education. It should be.
If you apply these three principles — balance fats, get enough amino acids, and take your vitamins — your immune system will be stronger, your recovery faster, and your overall risk of chronic disease dramatically lower.
At TrueMedX , we make this easy with targeted products:

But more than that, we want you to know how nutrition really works — so you can teach it to your family and future generations.
Thanks for joining me, and we’ll see you on the next episode of Chip Talks Health.
Most of us were taught to look at food in terms of calories, carbohydrates, fats, and proteins. While these categories matter, they don’t tell the whole story. Food is information. Every bite of fat, protein, or carbohydrate programs the systems inside your body — especially your endocannabinoid system (ECS) , the master regulator of balance.
In the white paper Addressing the Omega-6 and Omega-3 Imbalance in the U.S. Food Supply, Dr. Simopoulos and Chip Paul highlight a striking reality:
Modern diets are overloaded with omega-6 fats (from industrial seed oils like soybean, corn, sunflower, and cottonseed).
At the same time, we are deficient in omega-3 fats (from fish, algae, flax, chia, and grass-fed animal products).
Humans evolved on a diet where omega-6 and omega-3 were naturally balanced. Today, the ratio in the Western diet can reach 20:1 or higher — a level that fuels chronic inflammation, obesity, and metabolic dysfunction.
This imbalance is not just a “nutrition problem.” It programs the ECS in a way that overstimulates appetite, disrupts immune function, and accelerates aging.
According to the white paper, excessive omega-6 intake is linked to:
Obesity and Type II diabetes
Cardiovascular disease and high blood pressure
Autoimmune conditions (like rheumatoid arthritis, lupus, and MS)
Neurodegeneration and cognitive decline
Increased vulnerability to infections
Meanwhile, omega-3s support:
Brain development and mental resilience
Anti-inflammatory processes
Immune balance
Recovery and healing
Longevity and healthy aging
Nutrition, then, isn’t about “low fat” or “low carb.” It’s about balance — specifically, balancing these essential fatty acids.
The imbalance traces back to the mid-20th century. Following World War II, vegetable oil production surged. Influential campaigns from the American Heart Association promoted replacing saturated fats (like butter) with seed oils, under the assumption this would prevent heart disease.
But studies like the Lyon Heart Study later showed the opposite: while linoleic acid (omega-6) lowers cholesterol, it increases cardiovascular mortality.
At the same time, industrial agriculture shifted livestock from grass-fed to grain-fed diets, further tipping the balance toward omega-6. Processed foods only made it worse — with today’s ultra-processed diets averaging a staggering 11:1 omega-6/omega-3 ratio .
Chip and Dr. Simopoulos point out that this isn’t just a public health issue — it’s a national security concern . Soldiers and first responders depend on cognitive performance, stamina, and recovery. A pro-inflammatory, omega-6-heavy diet undermines readiness and resilience.
Fixing nutrition at the systemic level means healthier individuals, lower healthcare costs, and even stronger military preparedness.
So how do we reclaim nutrition and restore true health?
Rebalance the Omega Ratio
Reduce seed oils (soybean, corn, sunflower, safflower, cottonseed).
Choose grass-fed, pasture-raised, and wild-caught sources.
Prioritize omega-3-rich foods like salmon, sardines, flax, chia, walnuts, and algae oils.
Rethink Processed Foods
Up to 72% of calories in the standard Western diet come from foods our ancestors never ate.
Shifting back to whole, minimally processed foods restores natural nutrient balance.
Educate & Advocate
Public awareness and professional retraining are essential.
Chip and Dr. Simopoulos call for a Federal Omega-6 and Omega-3 Committee to investigate and reform the U.S. food supply.
This document breaks down the science and policy solutions that could shift America’s health trajectory for generations.
The truth about nutrition isn’t found in fad diets or calorie math. It’s about cellular balance — especially the fats that program your body’s master regulator, the ECS.
By restoring a healthier ratio of omega-6 to omega-3, we can fight inflammation, support resilience, and reclaim the health that human biology was designed to enjoy.
Nutrition is not just personal. It’s generational. It’s national. And it’s time we told the truth.
They program your endocannabinoid system. Omega-6 drives inflammation; Omega-3 cools and repairs. Balance is critical for immunity and healing.
Unfortunately, modern agriculture and processed foods have skewed nutrient profiles. Even with a clean diet, most people still need Omega-3 and B/C vitamin supplementation.
Essentials must be eaten daily; conditionals are produced by the body unless you’re stressed, injured, or infected. Most people today need both.
B vitamins fuel mitochondrial energy and DNA repair. Vitamin C reduces oxidative stress and supports collagen. A, D, E, K regulate immunity, vision, clotting, and more.
Increased susceptibility to infection, inflammation, autoimmune issues, cognitive decline, and a higher lifetime risk of chronic disease.
