Ingredients:

  • 2 acorn squash, halved and seeds removed
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
Instructions:

1. Preheat your oven to 375°F (190°C).

2. Place the acorn squash halves, cut side down, on a baking sheet. Roast for about 30-35 minutes or until the squash is tender when pierced with a fork.

3. While the squash is roasting, rinse the quinoa under cold water. In a medium saucepan, bring the vegetable broth to a boil. Stir in the quinoa, reduce the heat to low, and cover. Simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.

4. In a large mixing bowl, combine the cooked quinoa, dried cranberries, chopped pecans, fresh parsley, olive oil, minced garlic, and ground cinnamon. Season with salt and pepper.

5. Once the acorn squash halves are done roasting, turn them over and carefully fill each half with the quinoa mixture.

6. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the filling is heated through and slightly crispy.

7. Remove from the oven and let cool for a few minutes before serving.
